STONE CRAB CLAWS- FL The sweet delicate meat of the stone crab claw makes it one of our most popular items in Florida and when in season at Sammy's Seafood. Stone crab claws are always sold pre-cooked. Simply chill for cold applications or heat gently for hot dishes. Claws are sold by size-mediums, large, jumbo and colossal.

SOFTSHELL CRABS- FL Small in size, But BIG in Taste, These Crabs caught just after molting (before the new shell has had time to harden) are prepared as soft shell crabs. Size: approx 3-4". Available in summer season only. Harvested and sold by the dozen in straw box.

KING CRAB- WILD ALASKAN We offer frozen cooked King Crab, all sizes and splits. Sweet and slightly salted meat-red king crab is mainly harvested in the Bristol Bay area of Alaska. This population of red king crab is currently stable and healthy. Alaskan King crab is harvested during a very short season making it a rare treat for seafood lovers. This variety is impressive due to the size of the legs and the rich flavor of the meat.

DUNGENESS CRAB- WILD USA
Hailed by many chefs as the finest crab in the world, Dungeness is only available on the West Coast from Alaska to the Central Coast. A rich buttery taste and sweet right out of the shell. EXCELLENT Steamed and Cracked, or Ciopinno. They are named after Dungeness, Washington where the first commercial harvesting of the variety was done. Dungeness is high in protein and minerals and low in fat, has a delicate flavor that is slightly sweet. Dungeness crab is one of the meatiest crabs available--one quarter of the crab's total weight is meat.

JONAH CRAB- WILD USA
The Jonah Crab is a deep-water dweller and not easily caught. Ours are from Nova Scotia. The snap and eat claws are very meaty and tasty. They are pre-cooked, with the half-shell removed, making them very easy to prepare and serve. Jonah Crab claws are relatively large and can be an inexpensive substitute for stone crab claws. With only a handful of processors specializing in this fishery, the quality of Jonah and rock crabmeat is very consistent. The claws are so well muscled that they are generally a more prized food over legs, which are more typically sought after in other crab species. Jonah meat is more uniformly white with a sweet taste.

The Blue Swimming Crab
can be found along the east coast as well as Venezuala, Thailand, Vietnam, and China. Fresh pasteurized crab meat is sold after taking the meat from freshly steamed female crabs.
There are several grades of crabmeat. Among them are: Claw, Special, Backfin, Lump, Jumbo Lump, and Colossal.
SPECIAL
Small pieces of backfin meat comprise the Special. This meat has pieces of shell which has to be removed before eating.
BACKFIN
has larger meat from the body of the crab and less shells.
JUMBO LUMP
is the best form of crab meat. It contains large lumps of meat and very little shell.
Pasteurized crabmeat remains fresh for 6-12 months, if refrigerated at 33-35 degree Fahrenheit and as long as the can is not opened. Once the can is opened, the contents should be used within 3 days.
