FLORIDA LOBSTER- WILD FL  Flavor profile: Coarse texture, white meat with sweet distinct flavor. Low fat. Substitutes: Blue Crab, Golden Crab, Rock Shrimp, Shrimp. The spiny lobster (Panulirus argus) is a crustacean related to crabs, shrimp, crayfish and the Spanish lobster. In Florida, the spiny lobster is caught off the Keys and around the southern tip of the state.

This is often attributed to the fact that cold water lobster grows slower than do warm water lobster. Cold waters keep Maine lobster meat tender and prevent the saltwater from saturating the flavor of the meat. This is the primary reason Maine lobster tends to have a sweet flavor. Approx. LOBSTER TAILS-  Warm water  Spiny Lobster Tails or rock lobsters, have sweet succulent white chunks of meat. Milder flavor than cold tails. Warm water lobsters are often the most affordable option and hail from the Caribbean, Florida, Cuba, Nicaragua, and Latin America. Available in a variety of sizes.
