SELECT- TX/LA
The Texas/Louisiana select oyster is typically a 80-100 count per 30 pound bushel. Salty-sweet with a great size, these Gulf specialties are priced great and a local favorite. Unfortunately, due to the recent oil spill of Deepwater's rig-most all of the Gulf's select and standard oyster (Apalachicola) beds have suffered. Texas western beds hold strong. |

BLUE POINT - CT
Connecticut Blue are roughly three and a half to four inches in diameter with a relatively round shell, and pronounced cup. The meat of Blue Points are full and possess a mild to medium level of salinity. Blue Points are the result of a unique blend of aquaculture and natural development.

CAVENDISH CUPS - PEI
Cavendish Cups are a prime example of everything a wild, large choice oyster should be. They range between three and a half and four and a half inches in length, and possess dense, hard valves which shuck easily. Meats are full and firm, and have a flavor composition which is characterized by a bright brininess.

LA ST. SIMON - NB
Refined, brown-shelled, light-bodied oysters from New Brunswick, are equally uniform in their smooth teardrop shapes. Their gray flesh is salty and their meat possess a pleasantly firm texture, with a flavor composition that opens with a medium salinity and closes with a subtle sweet-citrus finish.

LADY CHATTERLY- N. SCOTIA
Oysters are consistent in both size and shape, and are every bit as aesthetically pleasing as they are delicious. Very deep-cupped, and the oysters are both dense and heavy for their size with a high-brine liquor-meaning supreme longevity. Available from May through late January. As the sea ice sets in, commercial harvest of the Lady Chatterleys ceases to be commercially feasible. |

SALT PONDS - RI
Big, bountiful, and intensely flavorful. They are unusually metallic for a virginica, with hints of the iron and petrol flavors found in other Point Judith Pond oysters. These 2.5-year-old oysters are very large, heavy, and strong. The shells—bronze and black-striped on top, a lovely white-green on the bottom—shuck smoothly every time, yielding a rich meat.

WELLFLEET - Ma.
Wellfleet oysters have been considered some of the world’s best for generations. These oysters tend to be long and strong-shelled and plump and clean with a distinctively good balance of creamy sweetness and brine. Experienced tasters find that oysters that grow in saltier waters tend to have a cleaner, sharper flavor.

ISLAND CREEK - MA
Island Creek oysters cup depth and shell strength is excellent in the Island Creek oysters. Each choice oyster is three to four inches in length, and possesses a medium salinity with an unmistakable sweetness and a hint of seaweed.
