Ahi Tuna

With Pineapple and Wasabi Cream


Ingredients

  • 2 Pounds Fresh Tuna Steaks, Cubed
  • 1 Fresh Pineapple, Grilled and Cubed
  • 1 Cup Soy Sauce 
  • 3/4 Cup Chopped Chives 
  • 2 Tbsp Sesame Oil 
  • 1 Tbsp Toasted Sesame Seeds 
  • 1 Tbsp Wasabi Powder 
  • 1 Cup Heavy Cream 

Procedure

  1. Combine cubed ahi, soy sauce, chives, sesame oil and sesame seeds in a bowl.
  2. Mix well.
  3. Grill fresh pineapple and then cut into cubes.
  4. Mix wasabi and heavy cream until light and fluffy.
  5. In a ring mold, put a layer of grilled pineapple, then fill the rest of the ring mold with the Ahi poke.
  6. Top with a dollop of the wasabi foam.
