Ingredients
- Vegetable Oil, For Frying
- 8oz. Fresh Florida Grouper
- 2 Tbsp. Blackened Red Fish Magic Seasoning (by Paul Prudhomme)
- 1 Tbsp. Kosher Salt
- 2 Cups Buttermilk
- 1 Cup Cornmeal
- 1 Cup Fish Fry Flour
- 2 Portions of Bread (French Loaf, Hoagie, or Kaiser)
- 1/2 Cup Mayo
- 1 Heart of Romaine
- 1 Medium Beef Steak Tomato
- 1 Small Red Onion
- 1/2 Cup Pickles
- 1 Lemon
- 1 Tbsp. Tobasco Sauce
Procedure
- Heat the oil in a large sauce pan or preheat a deep fryer to 360º F.
- Cut grouper into two portions of 4 oz. each
- Season with red fish magic or blackening seasoning of your choice.
- In a mixing bowl, combine cornmeal and fish fry flour.
- Dip the grouper into the buttermilk, then dredge into the flour mixture, coating the fish completely.
- Fry the fish in the oil for about 4 minutes.
- Remove from oil and drain on paper towels. Season with salt.
- Split bread and spread each side evenly with Mayo.
- Shred romaine. Chop tomato. Julienne onion. Dice pickles. Mix together in bowl and dress with the juice of the lemon and Tabasco sauce. Season with salt.
- Place fried grouper filet on bottom of bread, dress with slaw, eat and enjoy.
